Might I suggest Burlington VT as well, seeing the 4th of july fireworks over lake champlain is awesome. Plus Vermonters have a great attitude towards life, its the closest thing to southern hospitality.
If you do go to Maine, remeber to spend all kinds of money there!!! as mom and dad could use a break on their property taxes...

I agree on skipping the coastal routes. From Kittery on up to Rockport. You can get lobster inland too.
Besides Baxter. If you stay inland there is also Rangeley Lakes area. Probably my favorite. Mount Blue State Park also. I never got that big of a kick about driving up Mt. Washington. You can get just as scenic a view in Maine going up any of the "big hills".
+1, what Jake said. Please spend lots of money up there. Property taxes are too high. My relatives would appreciate it.
