I don't know for sure, but I think that the AI responds to your driving style. I have heard stories on the Xbox Live forums of how if you piss off one of the AI drivers, they are more agressive right back at you. So if you believe "rubbing is racing", the AI drive may rub right back.

In PGR2, in some challenges, you had not choice but to wreck your way to the front (Platinum level = last place on the grid, expert level AI, and a requirement to come in first place or you lose). I don't think you can do this in Forza. Especially if you race with simulated damage turned on.
I wish some of the races were longer. I think the ones I have run so far have only been about three laps. Sometimes it takes me at least a lap to see where I am faster (and can pass) than the AI cars. After that lap, I only have two laps left. I have noticed that they seem to be pretty timid with respects to chicanes. They don't want to ride the curbs much, so I have been able to pass them in those situations pretty easily. Then again, I am not on the highest difficulty level either.
