Go with the Tahoe. Trying to tow with the "not so big" SUV's is hard on both the truck and the gas tank. I get 17mpg w/o the trailer, 15 w/ it. Truck hardly ever down shifts to maintain 70mph, unlike a smaller vehicle. Don't forget that a smaller, 4000lb truck pulling a 5000lb trailer will be a battle if there's any wind or if you need to stop. This is one case where bigger is better.

I bought a Nissan Armada on Saturday. It's about the same size as a Tahoe/Yukon. Huge V8 and tons of towing capacity. Pretty nicely trimmed out too. Has the stuff the family likes for long trips, so everybody was happy!
