Here's that pizza recipe...

4 oz cream cheese
3 eggs
1/3 cup cream *
1/4 cup grated parmesan cheese
1/2 tsp oregano
1/4 tsp garlic powder
2 cups mixed italian cheese
1/2 cup low carb pizza sauce **
1 cup of mozarella cheese

pizza toppings of your choice:

pepperoni
ham
onion green pepper
mushrooms
bacon
browned sausage or ground beef

addt'l parmesan cheese for topping

*check the label on the heavy cream container and make sure it says 0 carb, not all of them are, Food Lion brand is 0 carb.
**Carb Options brand spaghetti sauce works well for just a few carbs, otherwise make your own from tomato sauce and spices.

Preheat oven to 375

Beat together softened cream cheese and eggs til smooth. Add cream, parmesan cheese and spices and mix again. Spray 9 X 13 casserole dish with PAM type product. Sprinkle 2 cups of italian cheese into dish, then pour egg mixture evenly over it. Bake at 375 for about 15 minutes. Remove from oven and let stand for 5 minutes.
Spread on pizza sauce, sprinkle 1 cup mozarella cheese, and pile with your favorite toppings. Then sprinkle with more parmesan cheese. ( I like to add a little more mozarella too.)
Return to oven and bake until bubbly and browning. Allow to stand 10 minutes before cutting.

Enjoy! A friend of mine in Canada gave me this recipe and I've just made a few suggestions through the experience of making it.

One pizza variation that Amy and I are very fond of is eggplant pizza. Noooo, it isn't pizza with eggplant topping! Instead, it's like a deep dish pizza, where the dough is replaced with sliced, baked eggplant. It's really quite amazing in that it tastes like pizza. Not too surprising, really, since eggplant has almost zero taste. ;)

The surprising part is that this pizza tastes as good as 90% of the takeout pizzarias, and better than any of the frozen or Pizza hut type places.
