You can just leave the HANS straps disconnected until you are pitted and ready to roll. It takes practice but you can practice at home before your first event and it should become easier. In fact I suggest doing this, anyway, since inevitably, you'll forget to connect them at some point, find yourself ready to roll, and if you don't know how to do it without looking, will have to pull aside or drive without them, either of which stinks.

I wore my Hans for the first time at the last Lemons race. It was never what I'd call comfortable in the pits - always feeling like it was pushing my head forward, but I really didn't notice it on track. As mentioned previously, we did use a panoramic mirror as well.

Check - panoramic mirror. It is on my shopping list now. I'll have to get one that clips onto the existing mirror.
