Miles,
If you want a "real" street tire you might consider these:
http://www.tirerack.com/tires/tires.jsp ... +Wide+Oval
For us old guys, the Wide Oval brand is a name from the past! It used to be used on the bias belted 70 series tires in the late 1960's. My 1969 Mustang GT would have come on that type of tire if I hadn't upgraded to BFGoodrich radials which were a factory option.
I just put a set on my 01 Mustang GT (whimpy 245/45X17's

) based on TireRack tests, etc. They appear to be a rebranded and somewhat lower priced version of Bridgestone RE-750's. They have actual tread grooves which is nice for the rain. Grip on the street seems a LOT better than my 5 year old GY Gatorbacks, especially in the wet but also in the dry.
The steering response is VERY much like R tires from the early 90's. Very crisp and a tendency to follow grooves, etc. in the pavement which to me is an indicator of a good stiff construction. Ride is fine and noise level is much lower than with the Gatorbacks. Even on all the concrete on my new commute to Cary via I-40 and Rt. 1.
As I recall the tested dry traction was comparable or better than almost all the tires Tire Rack compared them, or the RE-750's, to. Wet traction was even better compared to other choices. Ditto for steering response. Treadwear rating is 320 which is amazing given the apparent performance level. Wonders of modern chemistry I guess.
Given the nature of most THSCC courses and sites (transition intensive) whatever you get probably should score very well in steering response.
