I can understand that. At 6'5" and with size 13 shoes, I can't be picky about clothes and cars. It usually is "what do you have that fits" vs. what I actually want.

When you consider you'd never get an original flat 12 for a clone anyway (unless you were nuts), you won't be close to original anyway.
You can get them, they are just EXPENSIVE.
You have probably seen this, but here is a good story about some stolen NOS 907, 908 and 917 engines that were part of the Vasek Polak estate....

I keep thinking that there is a finite number of these types of cars. And as the wealth of people continues to grow that eventually those who have the "real" cars will never part with them. That leave others to the only option of building/buying clones. And I know that 99% of all clones are usually built to drive (and have improvements built in), but I can see more and more being built as close to the original as possible (design flaws, safety issues and all) for the obsessive collector.
Oh, and if you have people willing to build working 1/8th scale models of vintage Ferrari racing engines, at some point, someone is going to start building working full size vintage engines for cars like these. But at a substantial price!
