I have a friend that has a 68 mustang convertible that would like to have the drivetrain rebuilt/upgraded, with possible suspension upgrade as well. The body, interior, top are in good shape. Just would like to have something a little stronger than the I-6, possibly a 302.

Any recomendations?

A 289 or 351 would be more period correct, although carbed 302s are not uncommon. Obviously a new transmission would be in order in either case.

A simple OTS shock upgrade to a Koni, Bilstein or KYB would make a world of difference as well.

You know of any triangle shops that would be good for doing this kind of work? He's not really the car mechanic type.

Have him call Carolina Mustangs in Cary for a better discussion of options than I can provide.

The 302 replaced the 289 for 1968. The 390 was optional, and Ford built a small number of 428 Cobra Jet/4-speeds for drag racing. The most satisfactory upgrade would probably be a 302 crate motor.
