I have mine set on "3", IIRC it's 720p 60 fps mode and it runs like buttah on my Win7 core i7 machine. I'm using Roxio 2010 for editing, and with that you can export it in any one of a variety of formats--like many of the other alternatives perviously mentioned.

Windows Live Movie Maker will import any h.264 videos, and it will export to Quicktime containers and h.264 for HD videos if you have Windows 7.
Seriously, it's a free product that works.

@James, I mounted it high on the passenger side of the windshield.
I found it a bit strange that WMP would play mp4 but I couldn't import *.mp4 into Moviemaker (DVD Maker in Win7Pro). Andrew, could you help an old guy out?
edit: oh, I see. Windows Live MovieMaker was misunderstood by me as the Windows Moviemaker that coes with the OS. Apparently they are different. I'll download the Windows Live software and see if that helps. Ah...I can feel the rage subsiding
